Lamb and Pumpkin Pizza

Lamb stirfry strips
|

x 300g pizza bases

|
300 g

|
tomato salsa
|
|

cubed pumpkin, cooked until just tender

grated pizza cheese

Kalamata olives, pitted and sliced

dried oregano

1 bunch

fresh rocket

Method

Place the pizza bases on baking trays and spread with tomato salsa. Top with pumpkin, cheese and olives. Bake for 12-15 mins at 220C until the bases are crisp and the cheese golden.

Meanwhile, pan fry Lamb until browned and cooked, sprinkle with dried oregano. Place on cooked pizzas and scatter over fresh rocket.
